Our First Harvest at Northcote | Eating Fresh and (Very) Local

This week marked an exciting new chapter at LCS as our new ½ acre vegetable garden yielded its first harvest! LCS Farmer, Kohl Kuntz planted vegetable seedlings at Northcote earlier this month and we’re thrilled that some of the produce is already ready to consume. Kohl harvested 15 pounds of bok choy, 10 pounds of romaine lettuce, and five pounds of kale.

On Wednesday, the Aramark staff prepared a sweet and spicy stir fry, leafy green salad, and a kale and roasted vegetable salad made with veggies grown right on campus. 

Our students and staff can look forward to many more delicious meals prepared with our fresh, delicious produce throughout the summer as Kohl expects a cornucopia of vegetables to be harvested in the coming weeks. Peas, carrots, beets, arugula, mouse melon, cucumber, fresh corn, and tomatoes are just some of the crops that will soon be ready to eat.

In addition to these tasty goods, Mr. Canning worked with students to plant herbs in the courtyard outside the dining hall. When these herbs are ready to be harvested, meals at LCS will be garnished with basil, rosemary, thyme, sage, dill, cilantro, chives, and oregano!

We look forward to the many direct connections and learning opportunities our students will soon have to discover more about food, sustainability, regenerative growing, harvesting and giving back to their communities. We’re also grateful for the opportunities we will have to partner with local organizations like Nourish and Kawartha Food Share!

We're also looking forward to enjoying many more meals with fresh, delicious produce from our garden!
